What's in the CSA Pastured Lamb Share?

A balanced mix of cuts from one of our pasture-raised lambs, roasts (leg and shoulder), chops (loin, forequarter, chump), shanks, ribs, mince, and a few signature cuts. Everything individually packed and ProCryo-frozen. The cut breakdown rotates with what's been harvested that month.

Where does Your Farmer's lamb come from?

From The Loch and Kipdale Lambs, both pasture-raised on regenerative country. Our lambs graze diverse Southern Highlands pasture: native grasses, legumes, herbs. They're never confined, never given antibiotics, never grain-finished. The country in the meat is the flavour difference.

How is grass-fed lamb different from supermarket lamb?

Pasture-raised lamb is 50% higher in conjugated linoleic acid (CLA), with a better omega-3 balance, more selenium, zinc and B-vitamins than grain-supplemented supermarket lamb. The flavour is mineral-rich and slightly more complex, what farmers call "terroir." Once your kids try a properly raised chop, the supermarket version becomes a hard sell.

How often does the Lamb CSA Share deliver?

Monthly is the standard cadence, fortnightly available. You stay in control, skip, pause or cancel any time. Subscribe & Save knocks 10% off ($150 → $135 per share). Most subscribers pair it with a Beef Share or alternate the two.

How long does the lamb keep in my freezer?

At -18°C, ProCryo blast-frozen vacuum-sealed lamb keeps at least 12 months without quality loss. The vacuum seal stops freezer burn so it tastes as good in month 11 as it did week 1. Thaw in the fridge, usually overnight for chops, longer for roasts.

Is the Lamb CSA Share grass-finished as well as grass-fed?

Yes. 100% pasture from birth to harvest. No grain supplements, no feedlot finishing, no antibiotics, no hormones. The flavour comes from the country, not from a feed mix.
