📦 Cut: Topside Steaks (~460g) — All Packs
15 minutes, one pan, a genuinely excellent weeknight dinner
Pre-sliced topside steaks are ideal for stir-fries — simply slice them thinly against the grain and you have tender, quick-cooking beef strips ready for the wok. The key is to cut them thin, cook them fast, and not overcrowd the pan. Everything else takes care of itself.
💡 Freeze your topside steaks for 20–30 minutes before slicing — the partially frozen meat is firmer and much easier to cut into thin, even strips. Aim for about 3–4mm thickness, always against the grain.
Marinade Ingredients:
• 2 tbsp soy sauce
• 1 tbsp sesame oil
• 1 tsp cornflour
• 1 tsp grated fresh ginger
Stir-Fry Ingredients:
• 460g Your Farmer topside steaks, thinly sliced against the grain
• 2 bunches broccolini, cut into 5cm lengths
• 1 red capsicum, thinly sliced
• 3 cloves garlic, finely sliced
• Thumb of fresh ginger, finely sliced
• 2 spring onions, cut into 3cm lengths
• 2 tbsp neutral oil
Sauce:
• 3 tbsp oyster sauce
• 1 tbsp soy sauce
• 1 tbsp Chinese Shaoxing wine or dry sherry
• 1 tsp sesame oil
• 1 tsp cornflour mixed with 3 tbsp water
Method:
1. Combine the marinade ingredients and toss through the sliced beef. Set aside for 15–30 minutes.
2. Mix all sauce ingredients together in a small bowl. Set aside.
3. Heat the wok over the highest heat until smoking. Add 1 tbsp oil.
4. Cook the beef in two batches — spread in a single layer, do not touch for 30 seconds, then stir-fry for 1 minute. Remove and set aside.
5. Add remaining oil. Stir-fry the garlic and ginger for 20 seconds.
6. Add the broccolini and capsicum. Stir-fry for 2–3 minutes until just tender-crisp.
7. Return the beef. Pour the sauce around the edge of the wok and toss everything together until the sauce thickens and coats everything.
8. Add the spring onions and toss through. Serve immediately over steamed rice.
