Topside is lean, which means it wants gentle heat. At 150–160°C, with moisture in the pan, it transforms into something genuinely excellent. 💡 Topside makes the best cold roast beef for sandwiches. Cook to medium-rare on Sunday, slice thinly the next day, serve with Dijon mustard, horseradish, and rocket on good bread. This is the lunch you've been waiting for.

The Recipe: Slow-Roasted Topside with Mustard and Herbs

Ingredients:

     Your Farmer topside (~460g)

     3 tbsp Dijon mustard

     2 tbsp olive oil

     3 cloves garlic, grated

     Fresh thyme and rosemary, chopped

     1 cup beef stock

     Salt and cracked pepper

Method:

1.   Combine mustard, olive oil, garlic, herbs, salt and pepper. Coat the topside all over and marinate for at least 4 hours (or overnight).

2.   Bring to room temperature before cooking.

3.   Sear all over in a hot pan until deeply browned on every surface.

4.   Place on a rack in a roasting tin with the beef stock in the base.

5.   Roast at 150°C for approximately 25–30 minutes per 500g for medium-rare (internal temperature 57°C).

6.   Rest for 15–20 minutes. Slice thinly against the grain.
