Why Lamb Makes a Better Burger
A burger patty is only as juicy as the fat running through it, and that's where lamb mince quietly wins. The 480g pack in every Your Farmer® lamb share carries just enough natural richness to keep the patty basting itself from the inside — which means you can cook it all the way through, as mince must be, and still bite into something juicy. Handle the mixture gently and stop the moment it comes together; overworked mince makes a bouncy patty. The dimple in the centre stops it puffing into a meatball, and the chill is not optional — feta-studded patties need that fifteen minutes to firm up.
Two more small things that add up. Shape the patties a good centimetre wider than the bun, because they shrink as they cook and nobody's proud of a patty lost inside its bread. And rest them for those two or three minutes after the pan — it lets the juices settle back through the meat instead of ending up on the plate.
Fold the feta through last, in big crumbles. You want pockets of melting salt, not cheese-flavoured mince.
Swaps and Variations
- Greek-style: skip the buns and tuck the patties into warm pita with the mint yoghurt, tomato and onion.
- Haloumi swap: replace the feta with diced haloumi for chewy golden pockets instead of soft ones.

Storage and Leftovers
Raw patties keep 24 hours covered in the fridge, or freeze for 3 months layered between baking paper — thaw overnight before cooking. Cooked patties keep 3 days and are best rewarmed gently in a covered pan; a hard reheat squeezes the juice out. Best leftover move: crumble a patty into a wrap with the last of the mint yoghurt and whatever salad is in the crisper. Lunch, upgraded.
